Hidden Kisses

Makes 18 cookies

1/4 cup sugar
1/2 cup (1 stick) unsalted butter, soft
Pinch of salt
1 1/4 cups all-purpose flour
1 bar fine quality dark chocolate, such as Scharffen Berger 70%

Preheat oven to 350 degrees F.

Cream together the sugar and butter until light and fluffy, about 3 to 5 minutes. Add salt and flour and mix gently, just until dough comes together. Form dough into a thick disc, wrap in plastic, and chill.

Chop chocolate into hazelnut-sized chunks. Break off pieces of dough and pat out into small discs in the palm of your hand. Discs should be a 1/2 inch thick. Place a chunk of chocolate in the center of each disc and fold the sides over, sealing in the chocolate.

Bake on uncoated cookie sheets until the bottoms of the cookies just begin to turn golden, about 10 to 12 minutes. Cool slightly on racks then serve while chocolate center is still warm. Remember to share!
